Strawberries & Cream Crepes

This turned out to be such a heavenly, divine treat and you’d never guess the entire recipe is made from only fruit, cashews and a touch of natural sweetener. You could even add some collagen to boost the protein content. These crepes also make a perfect snack on their own, like a natural fruit roll-up!

Ingredients:

Strawberry Crepes

  • 8 large strawberries (approx. 1 cup)

  • 2 bananas

  • 1 tbsp lemon juice

Cashew Cream

  • 1 cup (150 g) cashews, soaked for 2 hours then rinsed

  • 1/2 cup (125 ml) water

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla extract

Strawberry Sauce

  • 4 large strawberries (approx. 1/2 cup)

  • 1 tsp maple syrup

Extra fresh berries for serving

Directions:

  1. Wash all berries.

  2. Blend all strawberry crepe ingredients in a high-speed blender.

  3. Pour the mixture into 4 even circles on a lined baking tray or dehydrator sheet. Smooth and level them out.

  4. Dehydrate or bake at 45°C for around 6 hours or until the crepes can be peeled off in one piece.

  5. While the crepes are drying, blend all cashew cream ingredients in a high-speed blender until smooth. Set aside.

  6. Blend the strawberry sauce ingredients until smooth. Set aside.

  7. Once the crepes are dry and flexible, spread with cashew cream, add fresh berries and roll them up. Drizzle with strawberry sauce and top with more fresh berries.

  8. Serve and enjoy! These items can be stored separately in the fridge for up to 3–5 days.
