Homemade Fruit & Nut Bars
Every time I go to the shops to buy any kind of bar for the kids, I find myself standing there far too long, analysing ingredient lists and struggling to find anything that resembles a decent, clean muesli bar.
So, here’s a simple one you can make at home. They’re quick and easy to customise with whatever nuts or dried fruit you have in the cupboard.

Ingredients
• 1 cup of mix nuts, chopped
• 1/3 cup of pumpkin seeds, chopped
• 4 fresh dates, chopped
• 1/4 cup of dried cranberries, chopped (sulphite free)
• 1/3 cup of pure maple syrup
• 1 tbsp nut butter
• 2 tbsp coconut flour
• 1 cup of coconut flakes
• Pinch of Himalayan or sea salt
Directions
1. Preheat oven to 150C & line a 20cmx20cm slice tin
2. Chop nuts, seeds and dried fruit
3. Mix maple syrup, nut butter, coconut flour and salt until well combined.
4. Add in chopped fruit, nuts and seeds and combine well. I used my hands to ensure it was mixed evenly.
5. Press firmly into your tin then bake in the oven for 20 minutes then allow to cool.
6. Place slice into a freezer for 1 hour or more to harden the bars up (optional).
7. Once hard cut into bars or slice pieces with a sharp knife. These can be stored in the fridge or freezer in an airtight container.
